Hey Bagel Friends,

I missed you.

It’s been a long while since we were in touch. A LOT has happened. Outside of the world events, which frankly I don’t even want to touch, I have moved on from the company I founded back in April and am restarting a new company. Maybe you heard…maybe not. Here’s a little bit of insight from our friends at Eater.

Hey Bagel is going to start slower…smaller more personal. I missed the wizardry of the creative moment. I missed making the bagels I truly craved. I can tell you this…I am making the best bagels I’ve ever made. Right now it’s early. After two successful pop-ups this summer at the Salish Lodge, I’m now renting commissary space in Redmond. My intention is to focus on the East Side. As an East Sider, we need more attention, and I hope to provide that. With this new commissary space, I can deliberately choose pop-up locations. I’ve had some very generous offers from folks. See below about my popup tomorrow Oct 21st. 

Delivery

Not only that, I’m going to start delivering again. I’ll start slow for now. Once a week. See how it goes. If demand is there, I’ll add more days. 

On that note, I’ve opened up ordering for deliveries on the East Side only for Friday Oct. 27th. I’ll deliver between 9am and 12pm. Preorders close on Tuesday afternoon. It’s short notice, but there will be more opportunities in the future.

The Future …

As I kick this new thing off slowly, I’m also planning on a brick and mortar. I’m getting close to signing a lease on a space in Bellevue, it’s expensive, and a risk, but if I can get my funding in order it will be worth it. The plan will be to bake smaller batches continuously throughout the day, so customers can get a hot or warm bagel whenever they come in…no need for toasting. And yes this time I’ll have bialys. FINGERS CROSSED THIS DEAL WILL GO THROUGH.
