Oh So Many Things Going On

Hey Bagels,

Hard to believe we’re in November. It’s been a wild last few months. We’re settling into a rhythm where weekdays have a nice steady pace, but without the long lines, while the weekends are where the action really happens. We’ve had two Saturday’s in the past few weeks where we produced 4.000 bagels! It’s an astounding number for our little space and our team.

Speaking of team, we’ve grown into an even more cohesive unit over the past few months. Our new GM, Kevin, is leading the overall team with grace and a growing efficiency. Our new Head Baker, Nance, has a leadership style that is both empathetic and effective. Both of these leaders have a passion for the bagel, customer service, and the health of the team. I’m very proud!

Now that we’ve found our cadence, we’ve just launched same day online ordering. With an hours notice you can now order baker’s dozen’s and schmears Monday - Friday. We’ve set it up to only allow 4 dozen per order for same day (though the darn system isn’t working so some folks have ordered more…oh well).

Catering is still available for orders of 5 dozen or more, perfect for party’s and events or meetings. We’ve been able to accommodate orders as much as 40 dozen bagels, out the door by 7:45.

Supporting our Community

In the beginning of October, we partnered with Seattle Children’s Hospital. At the end of Q3, Hey Bagel will donate 1% of proceeds to the Children’s Family Foundation. This is near & dear to my heart, as our family benefited from the Foundation over the years as our youngest daughter has had multiple open heart surgeries, and other procedures. The foundation provides the financial support for families unable to cover the high cost of expensive procedures, and lengthy stays. Finally I have a chance to give back.

In addition, we’re running a round - up campaign at check out. So far since the beginning of November we’ve raised about $1,500. I’d like to see it go higher.


Also, with this calloused handling of Snap benefits, and using food insecurity as a political pawn, Hey Bagel will provide 3 bagels, cream cheese and a coffee to anyone asking to put it on their neighbors tab. No questions asked.

Blueberry Parade!

It’s taken me a while to refine the formula for blueberry bagels. As you might recall, we were selling a very limited supply on Sundays, but truly, I wasn’t happy with the product. The shapes were unpleasant, the crumb was dense, and the bagels were hard to shape.

The team and I have taken my new formula, and come up with a better system to shape them which results in a softer sweeter bagel. Now served only on Mondays.
